Chicken Koobideh Ingredients

Koobideh Combo is made with one skewer of beef Koobideh and one skewer of chicken Koobideh. 

  • Ground chicken
  • Onion
  • Saffron, resting in boiling water
  • Turmeric
  • Pepper
  • Smoked paprika (optional)
  • Salt

Chicken Koobideh Recipe

  • Soak the saffron in hot water.
  • Combine ground chicken, smashed onion, saffron, turmeric, salt, black pepper, and red pepper well using your hands. 
  • Take a fist-size portion of the chicken mixture, place it around the skewer. Squeeze and make sure they don’t fall off. 
  • Put the skewers over the grill, turning them regularly until each kabob is fully cooked. When becoming golden-brown, its time to remove them.
  • Place the kabobs on a platter, squeeze a bit of lime juice over the kabob, sprinkle with sumac

Beef Koobideh Recipe

  • Mix onion, salt, the ground meat, sumac, turmeric, and pepper with your hands well for five minutes into a smooth paste.
  • Wet or oil your fingers, so the meat does not stick to them when you are making the kabobs.
  • Get a fist-size portion of meat, work the meat around the skewer. With your fingers squeeze the meat completely over the skewer.
  • Put the skewer on a shallow sheet; the meat should not touch the floor of the baking sheet. Remember to leave the tip of skewer bare and at least one inch from the handle empty.
  • Put skewers on a grill or over the charbroil. Turn them regularly to ensure a perfectly even grilling for about 15 minutes.
  • Place the tomatoes and onions on the grill and turn regularly. They are served as an accompaniment to the skewers.
